½ cup walnuts, chopped or ground in food processor<br />

¼ cup orange marmalade<br />

Icing<br />
2 cups powdered sugar<br />
1 teaspoon vanilla extract<br />
4 tablespoons milk (approximately)<br />
Colored sprinkles (optional)<br />

1. Sift flour, baking powder, and salt in a large mixing bowl. Whisk in the sugar and combine well.<br />
<br />
2. Cut in the shortening with a fork or pastry blender and work the mixture until it looks like cornmeal.<br />
<br />
3. In a separate bowl whisk together the egg, vanilla, and milk.<br />
<br />
4. Add the egg mixture to the flour mixture and mix with an electric mixer for a full 3 minutes. Dough will be soft.<br />
<br />
5. Remove the dough from the mixer and knead by hand for 5 minutes.<br />
<br />
6. Divide the dough into 4 equal pieces, wrap each with plastic wrap, and refrigerate for at least 45 minutes.<br />
<br />
7. To make the filling, grind figs, dates, and raisins in a food processor until coarse.<br />
<br />
8. Place fig, date, and raisin mixture in a bowl. Add the remaining ingredients and mix well. Mixture will be thick. Set aside.<br />
<br />
9. Preheat oven to 375° and line two cookie sheets with parchment paper.<br />
<br />
10. Work with one piece of dough at a time, leaving the remaining pieces in the refrigerator until needed. On a floured surface roll the dough into a 12-inch square. Cut dough into 2×3-inch rectangles. Spoon about 1 teaspoon of filling into the middle of each rectangle. Carefully fold the short edges over to meet in the center and pinch to seal. Seal the sides as well.<br />

11. Place each cookie, seam-side down, on a baking sheet, leaving 1-2 inches between each cookie.<br />
<br />
12. Bake for 12 to 15 minutes, or until the cookies are golden in color.<br />
<br />
13. Remove from oven and transfer to a wire rack to cool. Cool completely before icing.<br />
<br />
14. For the icing, mix together the powdered sugar, vanilla, and enough milk to achieve the desired consistency. You’ll want the icing to be thick enough not to be runny, but still easily spreadable. Ice the tops of the cookies and decorate with sprinkles, if desired. Let the icing set completely before storing in an airtight container.<br />

1. To prepare filling: Combine dried and fresh cranberries, honey, orange zest, cinnamon and cardamom (or allspice) in a medium nonreactive saucepan (see Note) over medium heat. Bring the mixture to a gentle boil and cook, stirring, until the fresh cranberries burst and soften, 4 to 5 minutes. Let cool slightly. Transfer to a food processor and puree. If the mixture seems dry, stir in up to 2 teaspoons water. Transfer the mixture to a nonreactive container and refrigerate while preparing the dough.<br />
2. To prepare dough: Whisk all-purpose flour, whole-wheat flour, baking powder, salt, baking soda, cinnamon and cardamom (or allspice) in a large bowl. In another large bowl, combine oil, butter, sugar, honey, eggs, milk, orange zest, vanilla and almond extracts. Beat the wet ingredients with an electric mixer first on low speed, then on medium speed, until well combined. Add half the dry ingredients and beat on low speed until just incorporated. Stir in the remaining dry ingredients with a wooden spoon until evenly incorporated. If the mixture is too dry to hold together, stir in up to 1 tablespoon more milk. Cover and refrigerate the dough for 30 to 45 minutes to reduce its stickiness.<br />
3. Turn the dough out onto a work surface and divide in half. Shape each half into a 6-inch-long log. Working with one log at a time, center it on a 16-inch-long sheet of baking parchment or wax paper. Cover with a second sheet. Press and then roll into a 12-by-15-inch rectangle of even thickness, inverting the dough occasionally to roll out any wrinkles and patching it to make the sides as even as possible. Transfer the dough, in the paper, to a baking sheet. Repeat with the remaining log of dough and transfer to the baking sheet. Place the baking sheet in the freezer until the dough is slightly firm, about 15 minutes.<br />
4. To prepare pinwheel rolls: Place one sheet of dough on a work surface. Peel off the top sheet of paper. Spread half the reserved filling evenly over the dough (it will be a thin layer). Working from a 15-inch-long side, tightly roll up the dough jelly-roll style, leaving the bottom sheet of paper behind. While rolling, slightly stretch out the center to yield an evenly thick roll. Wrap the roll in a clean sheet of wax paper, twisting the ends to prevent unrolling (see Tip). Place on a baking sheet. Repeat with the second piece of dough and place on the baking sheet. Freeze until firm, at least 3 to 4 hours.<br />
5. To bake cookies: Position racks in the upper third and center of the oven; preheat to 350 degrees F. Line 2 large baking sheets with parchment paper. Working with one pinwheel roll at a time, trim the uneven ends. Cut the roll crosswise into 1/4-inch-thick slices using a large serrated knife; periodically turning the roll to maintain a relatively round cookie shape. Place the cookies on the prepared baking sheets, spacing them about 1/2 inch apart. Bake the cookies until puffed and barely golden brown, 12 to 16 minutes, switching the pans back to front and top to middle halfway through baking. Preheat oven to 350°. Mix butter, 1 1/2 cups sugar and eggs thoroughly in a large bowl.<br />
Combine flour, cream of tartar, baking soda and salt in a seperate bowl.<br />
Blend dry ingredients into butter mixture.<br />
Chill dough, and chill an ungreased cookie sheet for about 10-15 minutes in the fridge.<br />
Meanwhile, mix 3 tablespoons sugar, and 3 teaspoons cinnamon in a small bowl.<br />
Scoop 1 inch globs of dough into the sugar/ cinnamon mixture.<br />
Coat by gently rolling balls of dough in the sugar mixture.<br />
9. Place on chilled ungreased cookie sheet, and bake 10 minutes.<br />

Mix the dough: In a large bowl, using an electric mixer, beat the butter on medium speed until it is soft and fluffy. Turn off the mixer and sprinkle in the sugar. Continue beating until pale.<br />

Turn off the mixer and scrape down the bowl with a rubber spatula. Add the orange zest, vanilla extract and almond extract and beat until blended.<br />

Turn off the mixer and add half the flour mixture. Beat on low just until blended. Add the remaining flour and beat until blended.<br />

Scoop the dough: Using a measuring tablespoon, scoop up a rounded spoonful of dough and then use your finger to push the dough onto one of the prepared cookie sheets. Fill both cookie sheets with the dough, placing the lumps of dough 2 inches apart so that the cookies have room to spread as they bake. You should be able to fit 12 cookies on each cookie sheet.<br />
Make the thumbprints: Dip your thumb in a little bit of flour and use it to make a dent in each ball of dough.<br />

Fill and bake: Fill each dent with a small amount of jam, scooping the jam with a teaspoon and pushing off just what you need with your finger. You can vary the types of jam you use to make different flavors of cookies. When the cookie sheets are full, put them in the oven and bake until the cookies are lightly browned, about 18 minutes.<br />
<br />
Let cool and serve: Let cool completely before eating.<br />
<br />
Line 1 cookie sheet with a new sheet of parchment. Scoop out the dough, then fill, bake and cool the rest of the cookies.<br />

1/2 cup butter, softened<br />
1 cup light brown sugar<br />
3 tablespoons granulated sugar<br />
1 large egg<br />
2 teaspoons vanilla extract<br />
1-3/4 cups all purpose flour<br />
1/2 teaspoon baking powder<br />
1/2 teaspoon baking soda<br />
1/2 teaspoon salt<br />
1-1/2 teaspoons instant espresso coffee powder<br />
1-1/2 cups semi-sweet chocolate chips<br />

Preheat oven to 300 degrees. Cream the butter with the sugars using an electric mixer on medium speed until fluffy (approximately 30 seconds)<br />
Beat in the egg and the vanilla extract for another 30 seconds.<br />
In a mixing bowl, sift together the dry ingredients and beat into the butter mixture at low speed for about 15 seconds. Stir in the espresso coffee powder and chocolate chips.<br />
Using a 1 ounce scoop or a 2 tablespoon measure, drop cookie dough onto a greased cookie sheet about 3 inches apart. Gently press down on the dough with the back of a spoon to spread out into a 2 inch circle. Bake for about 20 minutes or until nicely browned around the edges. Bake a little longer for a crispier cookie.<br />
